Salmon Eggs Benedict

1.5 tablespoons minced shallots
1 teaspoons dry mustard
3/4 cups dry white wine
1/3 cup whipping cream1 tablespoons white wine vinegar
6 large eggs

3 3/4-inch-thick slices brioche loaf or egg bread, lightly toasted, each slice cut in half on diagonal 
4 ounces thinly sliced smoked salmon (not lox) 
2 large egg yolks
1.5 tablespoons chopped fresh dill
