Penne with grilled chicken and pesto sauce

Yield: 4 servings

1/2 cup pine nuts
3/4 cup basil (fresh)
1 tbsp garlic (chopped)
1/2 cup olive oil
Salt and pepper to taste

4 boneless chicken breasts
2 cups penne
1 tbsp olive oil

Make the pesto sauce first… adding first the pine nuts and garlic, then the basil into a Cuisinart and blending, while slowly adding more and more of the olive oil til eveything is blended well.

Grill chicken (or you can saute them stovetop). Prepare the penne adding olive oil and salt to the water. Then mix the three (pesto, chicken and the pasta) together in a sauteing pan heating them up til all the ingredients mingle equally and the dish is uniformly warm. Grate fresh parm on top.
